Ah, the Instant Potâ„¢. Some people love them, and others question their existence.
After the initial discomfort and fear that comes with trying a new appliance that uses high pressure, steam, and extreme heat to cook and makes tender ingredients that generally would not be so on their own, wears off, you find the brilliance that is the Instant Pot.
I use mine as often as possible. When meal prep day rolls around, it is a beautiful device to have working in your corner.
Join an online Facebook group if you ever feel alone in your Instant Pot experience. You will find your hesitations and unease exist among millions of other people, and your silly questions are quite prevalent amongst other users.

Ingredients
1 lb. boneless, skinless chicken thighs
1 Qt. vegetable stock
1 14 oz. can coconut milk
2 C kale, destemmed, bite-size pieces
1 C carrots, julienne
8 oz baby Bella mushrooms, sliced
1 red bell pepper, julienne
1 lime, zested and juiced
¼ C green curry paste
2 T fresh cilantro
2 T granulated sugar
1 ½ tsp shrimp paste
1 tsp tamarind concentrate
½ tsp fish sauce
½ tsp salt
Pinch cayenne
Pinch black pepper
Directions
Place everything but the coconut milk, cilantro, and lime juice in the Instant Pot, starting with the vegetable stock. Lock the lid and close the pressure release valve. Pressure cook the soup on high for 7 minutes. When done, allow the soup to natural release for 3 minutes. Then hit cancel and press the pressure release valve to let the rest of the steam escape.
Remove the chicken thighs from the pot and shred in a medium-size bowl using two forks, then return to the Instant Pot. Stir in the lime juice, zest, and coconut milk. Garnish with cilantro and serve.
