This scrumptious meal combines a few of my favorite dishes — chicken alfredo and stuffed shells. Wholesome and scrumptious, these stuffed shells will leave your loved ones filling full and happy.
I love the addition of broccoli to the chicken alfredo flavor. Adding in vegetables whenever possible is a great way to elevate the nutritional level of a meal. The broccoli is incorporated into this dish in such a way that even the pickiest eater will enjoy it.
If you like chicken alfredo, then you will love these stuffed shells. I hope you give them a try soon.
In a large pot of salted boiling water, cook jumbo pasta shells according to package directions. Drain and return to pot. Set aside to cool.
In a large mixing bowl, combine shredded chicken, ricotta, ½ cup of mozzarella, ½ cup Parmesan, broccoli florets, salt and pepper.
Now, make the sauce. In a sauce pot over medium heat, melt the butter. Add the garlic and cook for about 2 minutes. Stir in the milk, remaining mozzarella and Parmesan. Bring to a simmer. Let thicken over low heat for about 3-5 minutes.
In a 9x13 baking dish, spread about half the sauce over the bottom. Stuff the shells with the chicken broccoli mixture and place in baking dish. Spoon the remaining sauce over the stuffed shells.
Bake until warmed though and bubbly, about 15 minutes. Serve warm.
