Making peanut brittle at Christmastime has become a tradition for my family. Peanut brittle is a staple holiday treat at my home. It is one of my dad’s favorite treats, so I look forward to making it for him each year.

Making candy at home is a delightful experience. My children love watching the process and really enjoy the finished product. Watching the candy thermometer closely to know when to add ingredients is a fun experience for everyone in the kitchen.
Because candy-making has different elements than regular cooking and baking, it is a great time to teach fun lessons in the kitchen. Adding the baking soda seems more like a science project than a kitchen lesson. As the baking soda releases tons of minuscule air bubbles, it’s exciting to watch as the mixture heavily froths. The most anticipated and amusing part – breaking the peanut brittle into pieces at the end.
Making peanut brittle at home isn’t as daunting as it may seem. It’s a fun candy to make and a delicious candy to eat. Measure out all the ingredients before you begin so you are ready to add them as the temperature reaches the necessary degrees. If you like peanut brittle, then clip this recipe and give it a try.
Peanut Brittle
2 cups white sugar
1 cup light corn syrup
¼ teaspoon salt
1 cup water
2 cups roasted peanuts
1 teaspoon baking soda
EVOO spray
Begin this recipe by lightly spraying a large cookie sheet with EVOO spray. Set aside.
Next, in a large saucepan add the sugar, corn syrup and water. Stir until sugar is dissolved. Bring to a boil over medium heat. Continue to gently stir.
When the mixture reaches 245 degrees on a candy thermometer add the peanuts and salt. Continue to cook and stir gently.
When the temperature reaches 300 degrees on a candy thermometer, add the baking soda. Stir to blend and cook for about 1 minute. Remove from heat and stir.
Pour the hot mixture onto the prepared cookie sheet. Working quickly, spread out the mixture with a wooden or silicone spoon. Cool completely and break into rough pieces. Store in a tightly covered container.
